Happy New Year to you and yours!
Isn’t it nice to have a sparkling reminder that you can (almost) start over? Maybe eat lesser cookie dough and plank 2 more sets.
My vote though, goes to making 2018 a little less about social media correctness and a lot more about being true to yourself. Which doesn’t mean spa dates or daily avocado smoothies but letting go of a toxic friend or simply cleaning out your wardrobe.
Fewer photo ops and more real moments.
Like the end to my 2017. Which had a short but sweet run in with a complete social media black out. This run in was called China. After severe withdrawals that probably felt like a rehabilitating coke addict, Day 3 was a breath of fresh air! Like I could literally step into a restaurant and actually smell the food cause my brain wasn’t distracted about gramming the perfect shot. Who would’ve thunk it?
Ferrying the ‘stop and smell the flowers’ attitude into the new year, I am starting this year with a big dose of happy hormones.
I call them the ‘Single Lady Pancakes’. Healthy vibes for one.
Them’s gluten free and sugar free so you’re one step closer to your new year resolution of eating healthy. I think you could easily miss gym after these pancakes, no?
You’ll need a little prep for these babies, but the extra work is totally worth it. It’s easiest made in your jammies with a little jazz on the loud. After all, there’s something very therapeutic about making pancakes for one. You make them for yourself, you eat them yourself. And then you burp, yourself. It’s a happy circle.
Single Lady Pancakes
Ingredients
- Ragi Flour (Finger Millet) – 100g
- Rice Flour – 50g
- Oat Flour – 100g
- Applesauce -50g
- Honey or maple syrup – 3 tbsp
- Milk – 200ml
- Cinnamon powder – A pinch
- Baking powder – 1/3rd tsp
- Salt – A pinch
Method
- Mix all the ingredients and let it sit for an hour
- Heat a pan or a griddle and coat it with a little butter or ghee
- Take a ladle full of pancake batter and gently our it out onto the pan. Wait till the edges turn golden and then flip them.
- Serve with apples and caramel sauce
