I am very skeptical of anything labelled ‘skinny’. One of the three on my list (after jeans and chocolate chip cookie) is a delicious cocktail called the Pina Colada. And while it contains more than 400 calories (see, I checked) I figured drinking one too many would be hazardous to lazy folks who keep missing gym. Which lets face it, is pretty much everyday. And if you can’t burn it, you don’t earn it. Now I can’t give up this insanely delicious drink, you must be off your rockers to suggest it. So I HAD to find an ‘easier on the hips’ solution to the Pina Colada. And Voila! Presenting the ‘Skinny’ version of my favorite summer drink.
And here’s the mandatory spiel about how the ingredients in this drink are going to make your skin glow like the sun and delete all damage of dipping bourbon biscuits into your masala chai. No seriously.
I’ve used fresh pineapple chunks which is rich in Vitamin C and a rich source of copper. The coconut cream is swapped out for fresh coconut water which as we all know is cholesterol free, great in aiding digestion, and of course in hydrating the body. Moreover, its a great recipe for people who are Vegan or lactose intolerant.

Skinny Pina Colada
Ingredients:
Pineapple Chunks – 4-5
Demarara Sugar – 1 tsp
Fresh Lime Juice – 30ml
Coconut Water – 45 ml
White Rum – 60ml
Method:
- In a cocktail shaker, muddle the pineapple chunks and sugar together. Add lime juice, coconut water, white rum and stir it around to combine the flavours.
- Add ice to the shaker and give it a good whipping till there’s about as much foam as a cappuccino.
- Serve on ice and garnish with the goodness of summer
So get this Skinny Pina Colada on to beat the mad heat and flaunt your hot biking body. And I’ll do just the same. Not cause I am a beach bum (I live in a landlocked city) but cause its too hot to wear too much anyway. Pineapple Away!
